...It would be this saute pan. I got it as a gift and thought I needed something fancier; now I'm working my way through the rest of the set. Heats quickly and evenly, cleans up in no time (take that, nonstick), and it's big enough for a one-pan dinner. Caramelizes like a dream and can withstand any sharp utensils you've got.
